  • Oil
  • Garlic cloves
  • Basil

Method:

1. Start by chopping up tomatoes into large cubes and adding them to a blender.

2. Add 3/4 cup (150 ml) of white vinegar and 1/2 cup (120 ml) of sugar. Blend until smooth.

3. Taste test the mixture and adjust seasoning levels accordingly, then put it aside.

4. Next, heat up your saucepan and add the oil. When hot enough, add the chopped garlic cloves and sauté them well until golden brown. Then, remove them from the pan immediately.

5. Put back the pan on medium heat and pour the blended tomato mixture into the pan. Stir continuously, making sure it doesn’t stick to the bottom of the pan. This step takes approximately 10 minutes.

6. After this time, add the remaining 1/2 cup (125 ml) of white vinegar, stirring well so the sauce thickens.

7. Finally, stir in the chopped fresh basil and season with salt and pepper.

8. Serve chilled in jars or store in glass containers in the refrigerator.
